Ask anyone in Theni what to order at Hotel Thattivilas and the answer comes back quickly: the mutton kulambu. It is the dish the kitchen has made every single day since 1975, and the one people travel across the district for.

The method has not changed. The masala is ground fresh rather than bought in. The mutton goes in early and stays on a low flame until the gravy thickens on its own, without shortcuts to speed it along. That slow reduction is what gives the kulambu its body and lets the spice settle all the way into the meat.

It is served the way it always has been — with parotta, idli, or hot rice. Simple, unchanged, and still the reason most of our regulars walk through the door.
